This blend has been formulated with over 30 years of experience in crafting espresso, the Sogo espresso blend stands in a league of its own. Unlike other blends that rely on inferior Robustas or cheap Brazilian beans, only top-quality, wet-processed Arabicas are used. Our espresso is inspired by the Northern Italian style, combined with the rich roasting traditions of old-school Seattle.
This proprietary blend of 100% Arabica beans is sampled daily to ensure quality and roasted fresh every day, with roasting temperatures adjusted to match the atmospheric conditions. In the cup, you’ll find a robust and richly aromatic espresso with a distinctive anise finish and a thick crema that lasts. It also maintains remarkable temperature stability, ensuring the flavor remains smooth without turning sour as it cools.
For the perfect shot, we recommend brewing at 193-194°F with 9 bars of pressure, using 18 grams of coffee for a 1.5-ounce shot (excluding crema). The shot pull time is flexible, ranging from 18 to 28 seconds, allowing for a wide working window.
